"We destemmed this fruit into one-ton fermenters in beginning of October. We then inoculated with our proprietary concoction of cultivated yeast, punched down 2 times per day, and fermented the wine to approximately 5 brix. Then it was delestaged and eventually pressed to tank 6 days later. We let this settle for 3 days, inoculated for malolactic fermentation and then racked from barrels back to barrels three times before bottling over the total aging period of 19 months in French Oak barrels."
We created these wines in homage to the pioneering spirit of Oregonians. We’ve always been in awe of the rugged courage it took to cross the Oregon Trail, homestead here, even plant Pinot Noir in the Willamette Valley – all to realize a dream.
When we learned that there had once been a town (founded and then disappeared in the early 1900’s) called Love, Oregon – well, let’s just say we were captivated. It seemed the least we could do to create beautiful Oregon wines that reflect their sense of place perfectly. Taste this place of dreams.
